Raise Your Glass for the Dallas PD!

IMG_6058If you don’t mind, Please raise your glass for the men and women holding the blue line at the Dallas PD tonight. My heart is heavy thinking of my friends there this evening.  I still bleed when you do!  I feel like I should be standing beside you, and I am in spirit!

Tonight’s cocktail also comes from Death & Company. Can you tell I’m really excited about visiting those guys in August?  Also, since I recently purchased their book you should expect that many of my nightly cocktails will come from there until I get bored with it.

This was one stiff cocktail, perfect for a night when you need to forget about the career assholes in this world who target the police because some criminal enterprise told them that’s what they should do. Tonight I feel bullet proof again. The Vieux Carré Cocktail is a strong drink that marries a handful of complex ingredients to produce synergistic output.  Similar to a Manhattan as it’s spirit forward on a 2:1 ratio of liquor to vermouth with some bitters as flavoring.  There’s added complexity here though by splitting the spirit into Cognac and Rye as opposed to just a rye or bourbon in a traditional Manhattan. Additional flavor is achieved by adding a spoon of Benedictine and some Peychaud’s.  While these added ingredients are small in volume, they add a huge amount of flavor.  The result is a drink that’s velvet smooth, richly spiced, and something you could drink virtually every night.

Vieux Carré Cocktail (adapted from Death & Co.)

  • 1 oz Rye (Rittenhouse 100)
  • 1 oz Cognac (Pierre Ferrand Ambre)
  • 1 oz Sweet Vermouth (Carpano Antica)
  • 1 tsp Benedictine
  • 1 dash Angostura
  • 1 dash Peychaud’s Bitters

Stir with ice to chill and dilute, then strain into a rocks glass.  Garnish with a lemon twist.
